Eurogamer have put together a list of games that they consider Cult Classics for the Xbox.
There are quite a few nice games in there. The ones I would consider most worthwhile are Beyond Good and Evil, Oddworld: Stranger's Wrath, Jet Set Radio Future, and Shenmue 2.
Obviously there are loads of games for all the consoles that are underrated and destined to become cult classics. The first that springs to mind is the recently re-released ICO.
